Dioscorea bulbifera Belongs to the yam family of tubers. However this one grows as a vigorous perennial vine and the tubers are edible. The plant grows best in moist, temperate areas with average annual daytime temperatures between 20 and 30°C. The plant is cultivated as a food crop and acts as a staple food in the diet of people in Asia & Africa. They taste almost like potatoes and can be used in a variety of cuisines. Should be treated and prepared like a yam. A good source of flavonoids, which are powerful antioxidants with anti-inflammatory benefits.
Fully ripe air potatoes tend to fall off the vine. You can replant the potatoes once they start sprouting, to grow a new plant.
